Traditional Pâté vs Supermarket Mousse

A genuine artisan pâté is made with a high proportion of meat — typically 45% or more — combined with natural fats, herbs and aromatics. What is sold as 'pâté' in most supermarkets is often a mousse: a highly processed product with a low meat content, bulked out with water, starch and emulsifiers. The difference in flavour, texture and nutritional value is significant.

The Fat Layer — Why It Is There

Traditional pâtés are sealed with a layer of fat — either clarified lard or a natural jelly. This is not a defect; it is a deliberate and time-honoured preservation technique. The fat cap creates an airtight seal that protects the pâté from oxidation and extends its shelf life without the need for artificial preservatives. Once opened, simply remove the fat layer and the pâté beneath is ready to serve.

Ambient Storage — How It Works

Ballancourt products are produced using a traditional sterilisation process that allows them to be stored at ambient temperature — no refrigeration needed until the jar or tin is opened. This is the same principle used in traditional French charcuterie for centuries.
